# Doughnuts

Sprinkle Cake Doughnuts






My city used to have a Krispy Kreme. The words "used to" are key here. 

I remember going into this store when I was a kid and being entranced by the huge doughnut making machine they had behind glass. It was like a mini doughnut machine but ginormous! And of course, whenever the light was on that meant they would be handing out fresh doughnuts to munch on!




At some point, this Krispy Kreme had to close down. I guess for a Canadian city, although we loved doughnuts we remained faithful to our native Tim Horton's (also the location was kinda meh like seriously that thing should have been downtown). Luckily I have been able to visit Krispy Kreme during my travels a couple times.




Occasionally I miss this Krispy Kreme and begin to majorly crave doughnuts. While there is a specialty doughnut shop in town I have learned to make my own delicious doughnuts that are a lot healthier than the ones you can buy in a store.

I've been told that I tend to exaggerate a lot but when I say that these doughnuts seriously taste like mini cakes I am not! They also look super fun and colorful with sprinkles. 




You could substitute the spelt with another flour but I would urge you not to as I think it is this flour that gives these doughnuts the perfect dense but fluffy cake texture while giving it a slightly sweet and nutty taste. Also spelt flour is so good for!  While still being high in carbs, spelt flour is a whole grain and is higher in protein, fiber and essential nutrients like iron and zinc than white flour. This fiber will keep slow down digestion, keeping you feeling full full longer so you can feel a bit better about indulging in baked goods made with spelt! 

So while you might not be in a Krispy Kreme, enjoy these doughnuts and be happy that your eating something good for you!



Sprinkle Cake Doughnuts
Makes six

Ingredients
For Doughnut:
1 cup spelt flour
1/4 cup coconut sugar
1/4 cup sugar
1/2 tsp salt
1 tsp baking powder
1/2 cup almond milk (slightly warmed so coconut oil doesn't harden)
3 tbsp melted coconut oil
1 egg
few tbsp of sprinkles
For Frosting:
2 tbsp coconut butter
1/4 cup coconut oil
3 tbsp honey
3-4 tbsp cocoa powder

Directions
1. Preheat oven to 350F and oil a doughnut pan
2. In a large bowl, mix together spelt flour, coconut sugar, salt, and baking powder until combined
3. In a separate bowl, add almond milk, coconut oil, and egg. Beat until well combined
5. Add wet ingredients to the dry and then sprinkle in your sprinkles! Mix together until everything comes together but be careful not to over-mix
5. Spoon mixture into your doughnut and bake for 10-11 minutes, or until the doughnuts spring back when lightly pressed. Allow doughnut to cool in pan for a few minutes before transferring onto a wire rack
6. While doughnuts cool, prepare the frosting: 
7. Microwave coconut butter and coconut oil in a bowl until melted, this should take about 30 seconds. Stir in between microwave intervals if needed
8. Add honey and cocoa power and mix together until mixture slightly thickens
9. Dip cooled doughnuts into chocolate mixture. Set aside and then dip doughnuts a second or third time until you're satisfied with the coating
