I also want to take this chance to thank all of you for your wonderful comments left on my last post. I value each and every word you write. So if you’re reading this right now please remember to leave a comment. You can say something positive, something to help me improve my blog, or just say hi.
I mentioned a while ago that I was going to be vegan in 2011 for one day a week. I decided that day will be Fridays and now I am having Vegan Fridays! My first Friday was last week and I ate all vegan friendly foods today. So far I love it and I'm thinking about adding another vegan day to my week.
By eating vegan I have felt happier and less tired. Not to say that I wasn't before but somehow I feel that eating this way leaves me feeling more refreshed and I don't crave sweet things as much. Plus I still get to have lots of yummy foods. Especially fruit, vegetables, and nuts!
I have also been surprised by how simple eating vegan can be. You really do not any special foods. In fact I already had many vegan cookies, cereals, snacks, and foods in my cupboard! What also makes it simple is that you do not need to rely on certain non-vegan ingredients (such as butter, meat, or cheese) to make your meal tasty. Things can be delicious and vegan without you ever trying. To prove this point I want to share this vegan friendly, healthy, and super easy recipe with you. I had it for my first Vegan Friday breakfast last week but it could also be great for a snack, lunch, or even dessert!
1 small whole wheat wrap
1 tbsp peanut butter
1/2 large apple, grated
1/2 tbsp raisins
Cinnamon
Place wrap on a flat surface and slather on peanut butter
Top with grated apple, raisins, and sprinkle on cinnamon
Roll it up and eat with leftover apple

This is my type of wrap! PB, apples and raisins go great together :)
ReplyDeleteVegan Fridays! I love the idea and I may have to copy you :-) Your apple and peanut butter wrap sounds DELICIOUS. How can you go wrong with that combination? Thank you for sharing! Many blessings on you and yours this weekend!
ReplyDeleteOh, good for you! Vegan food is really very fun and easy. :) Your wrap looks awesome. You should try my grilled peanut butter and apple sandwich next time! http://cleanteenkelsey.com/recipes/grilled-pba-sandwich/

ReplyDeleteJust found your blog and I wanted to tell you that I think it's absolutely fabulous! :D
ReplyDeleteLooks yummy! Apples + pb = my favorite combo ever! So simple yet so amazing!
ReplyDeleteWhat a good idea! And you're right, I find it quite easy to fix myself a tasty vegan meal here and there, even though I can't commit to it as a lifestyle.
ReplyDeleteThat's such an Earth and animal friendly New Years resolution! Love it :)
ReplyDeleteApples and PB are the best!! I also love eating carrots with pb!!
ReplyDeleteI love the addition of the raisins! This looks SO AMAZING!:)
ReplyDeleteBeing such a busy girl you have time to blog. You are just awesome. Love these wraps.
ReplyDeleteApples and PB are like the greatest snack ever! Seriously! Yumm! Even though I'm not technically a vegan anymore, I still eat like a vegan most of the time :)
ReplyDeleteCongrats on two successful vegan Fridays!
ReplyDeleteAs a vegan, I'm happy to see anyone reducing the amount of animal products in their diet. After all, 10 people reducing their animal product intake by 10% is pretty much the same as one person going vegan. So every step towards veganism definitely helps. Cheers!
looks yummy! my kids will love this (except i will use a Gluten Free wrap!!) Thanks! (and thanks for visiting.)
ReplyDeleteThat looks like a delicious concoction! x x
ReplyDeleteSo I found your blog today and I love it!! I especially love to see gluten-free recipes on blogs because they are hard to find good ones sometimes! Stop by my site sometime and say hi!
ReplyDeleteApple + peanut butter = happiness!
ReplyDeleteI went vegetarian last year and have since moved onto a mostly vegan diet and I feel like I have so much more energy too. I used to suffer from quite bad bouts of fatigue but these have lessened since I've started eating a more plant based diet. Somehow I also feel a bit calmer inside too.
Good luck with your Vegan Fridays Kat!
Great idea! Thanks! :)
