School is back in session and I'm as busy as ever. My week has mainly consisted of lectures, work, skating, the gym, volunteer training, freezing in the cold, more work, and then a little bit of studying and blog reading. Blah.... and by the way happy late 1/11/11! That's January 11, 2011. Just take a look at all those ones! In case you did not know this day was supposed to be one of good luck and achievements. Did you achieve anything?

I mentioned a while ago that I was going to be vegan in 2011 for one day a week. I decided that day will be Fridays and now I am having Vegan Fridays! My first Friday was last week and I ate all vegan friendly foods today. So far I love it and I'm thinking about adding another vegan day to my week.
By eating vegan I have felt happier and less tired. Not to say that I wasn't before but somehow I feel that eating this way leaves me feeling more refreshed and I don't crave sweet things as much. Plus I still get to have lots of yummy foods. Especially fruit, vegetables, and nuts!

I have also been surprised by how simple eating vegan can be. You really do not any special foods. In fact I already had many vegan cookies, cereals, snacks, and foods in my cupboard! What also makes it simple is that you do not need to rely on certain non-vegan ingredients (such as butter, meat, or cheese) to make your meal tasty. Things can be delicious and vegan without you ever trying. To prove this point I want to share this vegan friendly, healthy, and super easy recipe with you. I had it for my first Vegan Friday breakfast last week but it could also be great for a snack, lunch, or even dessert!



Apple Peanut Butter Wrap Up

1 small whole wheat wrap
1 tbsp peanut butter
1/2 large apple, grated
1/2 tbsp raisins
Cinnamon

Place wrap on a flat surface and slather on peanut butter
Top with grated apple, raisins, and sprinkle on cinnamon
Roll it up and eat with leftover apple

  14. Congrats on two successful vegan Fridays!
    As a vegan, I'm happy to see anyone reducing the amount of animal products in their diet. After all, 10 people reducing their animal product intake by 10% is pretty much the same as one person going vegan. So every step towards veganism definitely helps. Cheers!

  18. Apple + peanut butter = happiness!
    I went vegetarian last year and have since moved onto a mostly vegan diet and I feel like I have so much more energy too. I used to suffer from quite bad bouts of fatigue but these have lessened since I've started eating a more plant based diet. Somehow I also feel a bit calmer inside too.
