Trains and Pancakes

Dear Train,

Please never leave me out in the freezing cold again. It was minus 30 degrees Celsius outside at seven in the morning. Yet somehow you collided with a car.
And you made me late for my lab.
Why is it that emergencies like this always happen in freezing weather?
This is the second time you have left me trapped downtown in the winter weather
And like the fourth or fifth time overall that I have been abandoned by you
The first time I was actually a passenger on you when you got into an accident.
That was not fun.
And why is it that random strange people always talk to me when I am on you?
Its very creepy
I noticed that about 88% of people on trains are creepy
I actually saw a woman clipping her nails the other day
And why is it that you runaway from me as I am walking towards the station?
I also do not like it that I must sometimes wait more than 15 minutes as every train passes by except the one I need to get on
I don't like you train
You are not very nice
I think I'm going to start taking the bus

I seem to be unlucky when it comes to city train rides
Does anybody else have stories from being on the train? Or is it just me?

Now for some yummy pancakes to take away my worries.

I made these the other day and they were delicious. So creamy and versatile they make the perfect meal any time of day.
They are also gluten free, low in calories, and high in protein.


An unadorned cottage cheese pancake

Cottage Cheese Pancakes
Makes two servings of 3 or 4 pancakes each

1/2 cup gluten free oats
1/2 cup cottage cheese
2 eggs
Pinch of baking powder
Pinch of salt

Put everything into your blender of choice and blend until smooth.
Add some water if you want to have a thinner batter and therefore pancake and blend again
Pour about 1/3 cups of batter onto a heated pan
When pancakes bubble, flip and cook the other side
Serve to your liking

As I said before I love these pancakes because they are so versatile. You can make them sweet or savoury. I had some of mine with spinach, cheese, and garlic and then the others with maple syrup and nut butters!
They were delicious

For sweet pancakes add your choice and and amount to the batter before blending.
Suggestions for toppings:
Cinnamon, yogurt, fruit, nut butters, whipped cream, jam, maple syrup, agave, Nutella

For savoury add extra salt to the batter if desired
Suggestions for toppings:
Spinach, cheese, garlic, deli ham, fried onions, pepper, mustard, ketchup

The possibilities are endless!

  1. Hey I made pancakes today too :)
    I used to ride the train a lot to visit my dad. Ive seen everything on them. We stop in a town that has the mens county prison, and several times convicts have come onto the train in their grey jump suits. They have just been released and are going home I guess, but it can still be scary!

  3. I used to have the same problem with the train. I actually stopped taking it a couple of years ago because it was ALWAYS late when it was below minus 20. My toes couldn't handle it. I'm happy with my switch to the bus, but the people are definitely weirder on the bus.
    If only pancakes could be served while we commute!

  4. Cottage cheese pancakes...what a great idea. They look so yummy. I'm so sorry to hear about your train fiasco. Two benefits of living in Texas: no cold cold weather and no train problems. (then again, we have no public transportation, which is horrible) Thank you for sharing these photographs and your thoughts. You are a blessing!

  8. Oh my gosh, that's awful about the train!! I don't ride trains often, so I haven't really had any trouble with them. At least that pancake looks divine!
