Drinkable Carrot Cake and My Blog's New Look

Drinkable cake!
Hope that got your attention...

I thought it was about time that my blog's look was revamped! What do you guys think of the new look? I would love to have your input on anything I can do better. Please tell me if you are having viewing difficulties.

Usually I enjoy food I can chew on more than drinks but this is an exception. It is a perfect refreshing drink for the last weeks of summer. This smoothie is creamy, spicy, and sweet. It is everything you could imagine in a drinkable carrot cake.

So thick and creamy. I ate it with a spoon!

Drinkable Carrot Cake
Makes a small glass.
Double if you're drinking this as a meal
2/3 cup vanilla soy milk
1 small carrot (I used 5 baby carrots)
1 ice cube (or more if desired)
Pinch guar gum
1/2 frozen banana
1/2 tsp ground cinnamon
1/2 tbsp ground flax seed
Toppings: dried cranberries, cinnamon, melted coconut oil

1. Chop up carrot and place in a small microwavable dish

2. Add about a tablespoon of water to the dish and microwave on high for 30 seconds to 1 minute, until carrots have softened

3. Put all of your ingredients (except toppings) into a blender and combine

4. Pour into a glass and add your toppings

Mmm... hardened coconut oil

Another beverage I have been enjoying is this... love it

Do you like drinks?
Sometimes I think I'm strange because I usually only drink tea and water

  1. I didn't use to love drinks (because of my eating disorder) but I'm finally seeing the light. My newest obsession happens to be Starbucks Soy Cinnamon Dolce Lattes..oh.my.god.so.good. I'm in love with them and think about them nonstop. It's kind of ridiculous. Now I need to try your drinkable carrot cake because it looks pretty amazing too!

  8. I'm pretty much a water drinker- I rarely drink anything else (other than coffee or tea occasionally.) The idea of a drinkable cake sounds SOOOO good. I can't wait to try this!

  11. I only drink tea and water as well, though I occasionally have a diet carbonated beverage; diet because I drink it for the bubbles, not the sugar.

This drink looks fabulous; thanks for the recipe! Too bad almond milk isn't available in my local stores here =<

  17. I don't usually have a lot of beverages myself, because I've always considered liquid food a waste of my Weight Watchers points. But this looks like it must be tried!

  18. I'm definitely more of a chewing person. I don't really even drink smoothies. But that does look quite delicious -- if someone made it for me I would never turn it down haha. Also- love the look of the blog. I've never visited before today, but I do like it.

I like drinks a lot! But mostly just green tea, and... ok... diet coke ;) haha

  20. Sounds like the perfect blend of a treat and a healthy snack!

What I find most entertaining, though, is that Silk calls this beverage "TrueAlmond" in Canada, and "PureAlmond" in the US. I hadn't known that before, and now I can't help but wonder why.
