Catching Up

Hi guys!
Sorry about the lack of content lately. I have been busy busy and my new house has yet to discover Internet. As things settle down, I promise to make it up to you with plenty of delicious recipes that I have been hiding!

In case you missed it I did have a guest post last week on Moves and Munchies! I shared a delicious recipe for chocolate peanut butter swirl pancakes.

As you may know I love peanut butter!

Last weekend I finally got around to making my own at home. I have never been more excited.
I used this recipe except halved it and used already ground flax seed. It by far the best peanut butter I have ever had. I was so surprised by how simple and quick it was to make my own. There's no doubt that I am going to be doing this again.

By the way does anyone know how to portion control peanut butter? I swear most days end with me plus a fork plus a jar of peanut butter!

I also made my very first bundt cake for a potluck. We have had a bundt pan sitting around for who knows how long and I finally put it to good use. I used the recipe from Veganomicon. Everyone said they liked it and I don't think suspected it was vegan and low in fat as over 2/3 of the cake is gone now!

Peanut butter, love it or like it?

  4. There's no better combination than chocolate and peanut butter. Or at least none that I can think of at 6:44 am while I'm staring at this yummy cake!

  7. Making my own nut butter is one of those things I always mean to try, too. I know it's really super simple, it's just never at the top of my to-do list! This looks so good though, I may just need to bump it up a few places.

  8. LOVE peanut butter. Making your own is even better! I like to be able to customize it with fun flavors and tailor it to my liking. Plus I love telling people I make nut butter. They act like it's so weird or difficult - but it's so so so easy!
